- 1 big, red onion
- 1 sprig Lemongrass
- 1 garlic clove
- 2 ½ centimeters fresh ginger
- 2 ripe Mangoes
- 2 Tbsps Peanut oil
- 300 milliliters Chicken broth
- 500 milliliters unsweetened Coconut milk
- 5 Lime leaves
- 1 Tbsp Peanut butter
- soy sauce
- freshly ground peppers
- ground chili peppers
- Lime juice
- 4 Tbsps chopped, toasted Peanuts
Preparation steps

Peel the onion and cut into narrow columns. The lemongrass Clean and cut into thin rings. The garlic and ginger, peel and finely chop. The mango peel, cut the flesh to the core down and divide it into bite-size pieces.

In a saucepan heat the oil and sauté the onion with the garlic, ginger and lemongrass. With the broth and coconut milk refill, insert the lime leaves and simmer for about 15 minutes over medium heat.

Then Soak the mango, stir in the peanut butter and pull another 5 minutes and season with soy sauce, pepper, chili and lime juice. Serve with nuts sprinkled.
