4 egg yolks
4 Tbsps sugar
250 grams Whipped cream
30 grams Almond slivers (dry roasted)
2 Peaches (halved, from a can)
mint (for decoration)

Preparation steps

1.

Beat the egg yolks with 3 tablespoons of sugar until fluffy over a hot water bath.

2.

Stir in the espresso. Remove the bowl from the hot water bath and place in an ice water bath. Allow to cool while stirring.

3.

Whip the cream with the remaining sugar until stiff. Fold into the cooled cream. Pour in a bowl and cover with peach slices. Garnish with roasted almonds and mint leaves. Serve cold.
