- 0.333 cup Coffee bean
- 2.333 cups all-purpose flour
- 1 ½ cups Walnut (finely ground)
- 2 tsps Baking powder
- 4 eggs
- 1 cup sugar (heaped)
- ⅞ cup vegetable oil
- ⅜ cup prepared Espresso (chilled)
- 1 Tbsp cocoa powder
- 0.333 cup Walnut (roughly chopped)
- To decorate
- 1 ½ Tbsps instant Espresso powder
- 3 Tbsps cream
- 1.333 cups white chocolate (chopped)
- 4 tsps Coffee liqueur
- 2 Tbsps Chocolate Coffee bean (crushed)
Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and brush the baking tray with oil.
2.
Warm the milk, then remove from the hob and add the coffee beans.
3.
Mix together the flour, ground walnuts and baking powder. Beat the eggs and sugar together until foamy, then stir in the oil and the flour mixture. Next, add the milk and coffee beans in a thin stream and work into the mixture, then stir in the espresso and cocoa powder. Fold in the chopped walnuts.
4.
Spread the mixture over the baking tray and bake in the oven for 20-25 minutes, then leave to cool.
5.
Dissolve the espresso powder in the cream, bring to the boil and pour over the chopped chocolate. Stir until the chocolate has dissolved, then mix in the liqueur. Leave the mixture to cool slightly, then whisk briefly with a mixer.
6.
Pour the coffee icing over the cake. Garnish with the crushed beans, cut into slices and serve.
