800 milliliters Beef broth (instant or homemade)
l white wine
100 grams Crème fraiche
1 Tbsp lemon juice
1 red Bell pepper

Preparation steps

Cut avocado in half, pit, and cut the flesh into pieces. Toss avocado with white wine and lemon juice. Puree in a blender. Bring broth to a simmer and remove from heat. Whisk in the pureed avocado mixture. Stir in creme fraiche and season with salt and pepper to taste. Cool soup in the refrigerator for at least a half hour, until chilled. Rinse bell pepper, halve, remove seeds and ribs, and cut into small diamonds.

To serve, ladle the avocado soup into bowls. Garnish with bell pepper and cilantro leaves.
