Cook the sweetcorn in a pan of boiling water with a pinch each of salt and sugar for around 15 minutes. Drain and quench in cold water. Slice the corn off the cobs with a sharp knife.

Briefly blanch the courgette strips in boiling salted water to soften. Refresh in cold water and drain well.
3.
Whisk together the oil, lemon juice and honey with a little salt and ground black pepper. Mix with the sweetcorn, courgette and spring onions. Check the seasoning and divide between plates. Sprinkle over the basil and parmesan. Serve with ricotta if desired.
