200 grams crayfish (cooked)
1 small Papaya
1 tsp ginger (freshly grated)
1 red onion
1 garlic clove
1 Tbsp cilantro (chopped)
3 Tbsps Lime juice
2 Tbsps White vinegar
Tabasco sauce
salt
freshly ground peppers
sugar
½ tsp Mustard
6 Tbsps olive oil
200 grams Lettuce (mixed)
8 slices white bread (thin)
cilantro (for garnishing)

Preparation steps

Chop crabmeat finely. Peel papaya, halve, remove seeds and dice into small cubes. Peel onion and garlic and chop finely. Combine crabmeat, papaya, onions, garlic and 2 tablespoons of lime juice, mix well. Season with a few drops of Tabasco, salt and pepper. Cover and refrigerate.

Combine remaining lime juice, vinegar, mustard, and oil. Season with salt, sugar and pepper. Mix well. Rinse and spin dry lettuce, tear into smaller pieces.

Before serving salad, toast slices of white bread and cut, if desired, star-shaped pieces with a cookie cutter. Toss salad with vinaigrette. Place 4 bread slices on 4 plates, top with salad, cover with remaining bread slices and top with salad again. Sprinkle lettuce leaves around and garnish with cilantro leaves. Serve.
