- 1 cup sugar
- 3 eggs
- ⅞ cup sunflower oil
- 1 ½ cups Whole wheat flour
- 1 tsp ground cinnamon
- salt
- 2 cups grated carrots
- 1 ½ cups Walnut (chopped)
- For the topping
- 1 cup cream cheese
- 2 Tbsps light brown sugar
- 1 Tbsp Orange juice
Preparation steps
1.
Heat the oven to 180°C (160° fan) | 350F | gas 4. Place paper cases in a 10-hole cupcake tin.

Beat together the sugar, eggs and oil until light and frothy.
3.
Stir in the flour, cinnamon and salt and beat until combined. Stir in the carrots and walnuts.
4.
Spoon into the paper cases and bake for 20-25 minutes until firm and risen. Place on a wire rack to cool.
5.
For the topping: Beat the ingredients together until smooth. Chill for 30 minutes.
6.
Spread the topping over the top of the cakes and dust with a little cinnamon.
