Ingredients

For the soup
700 grams ripe Tomatoes
1 shallot
1 garlic clove
1 red chili pepper
2 Tbsps olive oil
100 milliliters dry white wine
500 milliliters Broth
150 milliliters Whipped cream
2 Tbsps finely chopped Basil
salt
freshly ground peppers
For serving
2 Tbsps acid Whipped cream

Preparation steps

For the soup: Rinse tomatoes and cut each into 8 pieces. Peel the shallot and garlic and chop finely. Rinse chile pepper, remove seeds if desired and finely chop. Sauté the shallot and garlic in a pan with hot oil for 1-2 minutes. Add tomato pieces and deglaze with the wine. Add broth and simmer for about 20 minutes over medium heat. Add cream and basil, bring to a boil, mash well and strain through a sieve. Season with salt and pepper and simmer for a few minutes or add broth (depending on the desired consistency).

To serve: Pour the soup into bowls and garnish each serving with a dollop of sour cream and some basil leaves.
