- 2 carrots
- 1 smal Kohlrabi
- 1 medium-sized potato
- 1 smal onion
- 3 Tbsps butter
- 1 tsp grated Lemon peel
- 2 Tbsps lemon juice
- 600 milliliters Chicken broth
- 200 grams Whipped cream
- salt
- peppers (from the mill)
- 100 grams mixed Fresh herbs (Parsley, chervil, cress, dill, etc.)
- 2 slices white bread
Preparation steps

Peel and chop the carrots, kohlrabi, potatoes and onions. Sautée onion in 2 tablespoons of butter, add in the rest of the vegetables, sautée briefly, then pour in the broth, lemon peel and lemon juice. Season with salt and pepper, cover and cook for about 15 minutes.

Rinse, shake dry and chop the herbs finely. Add the herbs to the soup, purée all and pass through a sieve.

For the croutons: cut the bread into small cubes and fry until golden brown in the remaining butter.

Ladle the soup into bowls, serve garnished as desired with herb leaves and sprinkle with croutons.
