18 ozs Spaghetti
4 egg yolks
cup cream
1 cup smoked Bacon (or pancetta, finely diced)
1 onion (finely diced)
1 clove garlic cloves (finely diced)
1 Tbsp olive oil
½ cup freshly grated Parmesan
4 Tbsps parsley

Preparation steps

1.
Boil the spaghetti in plenty of salted water until al dente.
2.
Put the egg yolks and cream in a bowl. Season with salt and ground black pepper and whisk together.
3.
Fry the bacon in 1 tbsp hot oil in a frying pan until crisp, and then remove and drain on kitchen paper.
4.
Add the onions and garlic to the pan with the remaining oil and fry until translucent. Drain the pasta and add to the pan, stirring to coat. Switch off the heat and mix through the egg and cream mixture.
5.
Arrange in pasta bowls and serve sprinkled with the bacon, parmesan and parsley.
