- 1 small onion (chopped)
- 1 clove garlic cloves (minced)
- ¼ cup flour
- 1 cup heavy cream
- 1 cup milk
- 2 cups chicken stock
- 4 cups frozen Broccoli (chopped)
- ¼ tsp Cardamom
- ¼ tsp Nutmeg
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 1 cup colby jack cheese (grated)
- 2 cups sharp Cheddar cheese (grated)
Preparation steps

Melt butter in a large pot over medium heat. Saute onion until soft and translucent. Add garlic and stir a minute longer.

Add flour, stirring constantly, until completely incorporated.

Add heavy cream, milk, and chicken stock; bring just about to a boil. Add broccoli, reduce heat to low, and simmer on for 20 minutes.

Season with cardamom, nutmeg, salt, and pepper. Add in the cheeses and simmer for about 10 minutes, stirring occasionally. Serve immediately.
