- 1 cup onions (peeled and finely chopped)
- 2 Tbsps natural vegetable oil
- 1 Tbsp fresh ginger (peeled and finely chopped)
- 1 Tbsp ground cilantro
- 1 tsp Turmeric
- 1 tsp ground Red pepper
- 1 ½ cups whole Tomatoes
- ½ cup dry white wine
- coarse salt (to taste)
- 12 cups fresh mussels (scrubbed clean with beards removed)
- 2 Tbsps fresh lemon juice
- 2 Tbsps fresh cilantro (chopped)
Preparation steps

Place onions and oil in a deep pot and cook, stirring over high heat until the onions are light brown and translucent, about 5 minutes. Lower heat and stir in ginger, coriander, turmeric, and red pepper. Cook for an additional minute.

Drain the canned tomatoes, reserving 1/2 cup of liquid. Stir in the tomatoes, salt, white wine, reserved tomato juice and mussels, and bring contents to a boil. Cover the pot and steam until the mussels open up, about 5 to 7 minutes. Transfer mussels and the sauce to a deep platter. Sprinkle with lemon juice and fresh coriander if desired. Serve immediately with Naan or other flat bread.
