Preparation steps

1.
Bring a pot of water to a boil. Fill a separate bowl with ice water. Remove stems from tomatoes. Make a shallow cut in the shape of an "X" on the bottom of each tomato.

Boil tomatoes for 45 to 60 seconds. Remove tomatoes immediately and plunge them into ice water. Drain; remove skin from the tomatoes, halve, remove seeds and chop finely.

In a small bowl, combine tomatoes, garlic, butter, and olive oil. Season with salt and pepper; mix well. Set aside.

Scrub the mussels thoroughly and remove beards. Discard any mussels that are already open or broken. Cook the mussels in a pot of boiling water for about 5 minutes. Drain and discard any mussels that have not opened.
5.
Preheat broiler.

Remove top shell from each mussel. Place a spoonful of tomato mixture on top of each mussel and sprinkle with Parmesan. Place mussels under broiler for 2 to 3 minutes or until golden brown. Garnish with basil leaves and serve.
