400 grams button Mushroom
100 grams floury potatoes
1 onion
1 garlic clove
2 Tbsps vegetable oil
1 Tbsp Pastry flour
150 dry white wine
650 milliliters Chicken broth (or vegetable broth)
100 milliliters Whipped cream (at least 30% fat content)
1 Tbsp Crème fraiche
salt
freshly ground peppers
2 slices white bread
30 grams butter
2 Tbsps scallions

Preparation steps

1.

Rinse and slice the mushrooms. Peel and finely grate the potatoes. Peel and finely chop the onion and garlic.

Saute the mushrooms in 1-2 tablespoons of hot oil until brown. Remove from the pan. Saute the onion and garlic in the pan. Sprinkle the flour into the pan and deglaze with the wine. Bring to a boil and add the broth.

Add the mushrooms and potatoes. Simmer for about 15 minutes. Puree and pour through a sieve. Add the cream and let simmer. If necessary, add more cream. Stir in the cream fraiche and season with salt and pepper.

Remove the crust from the bread and cut into small cubes. Fry the bread cubes in melted butter until golden brown. Serve the soup sprinkled with chives and croutons.
