- 250 grams button Mushroom
- 200 grams shiitake mushrooms
- 150 grams starchy potatoes
- 1 onion
- 2 garlic cloves
- 2 Tbsps butter
- 1 ½ Tbsps Pastry flour
- salt
- freshly ground peppers
- ground Nutmeg
- 4 centiliters dry sherry
- 800 milliliters Chicken broth
- 100 milliliters Whipped cream
- 2 Tbsps Crème fraiche
- parsley (for garnish)
Preparation steps

Rinse the mushrooms and cut into slices. Rinse and dice the potatoes.

Peel and finely chop the onion and garlic. Saute the onion and garlic in hot butter. Add the mushrooms and potatoes. Sprinkle with flour and saute. Pour in the broth. Simmer for about 20 minutes, stirring occasionallly. Remove some of the shiitake mushrooms. Puree the remaining soup. Add the cream, sherry and creme fraiche and bring to a boil. Season with salt and pepper. Pour into serving bowls and top with the shiitake mushrooms.

Serve sprinkled with parsley.
