4 Tbsps vegetable oil
1 large onion (sliced into rings)
2 tsps smoked paprika
3 cups Pork loin (cut into strips)
1 red pepper (deseeded and cut into strips)
1 cup double cream
chopped parsley (to garnish)

Preparation steps

1.
Cook the rice according to the packet instructions.

Meanwhile, heat the oil in a large frying pan and gently cook the onion until soft but not brown.
3.
Add the paprika and cook for 30 seconds, stirring all the time, then add the pork and pepper strips and cook over a high heat for 3 minutes.
4.
Add the cream, lower the heat and let the cream bubble and thicken. Continue cooking until the pork is just cooked through then season with salt and pepper. Serve with the cooked rice and garnish with the chopped parsley.
