- 3 cups Rice milk
- 1 cup single Soy cream
- ⅔ cup short-grain Rice (for rice pudding)
- 2 Tbsps sugar
- 1 tsp vanilla extract
- To serve
- Raspberries
Preparation steps
1.
Heat the oven to 140°C (120° fan) 275°F gas 1. Grease a 1 litre baking dish.
2.
Mix together the milk, soya cream, rice, sugar and vanilla and pour into the dish.
3.
Bake for 30 minutes. Stir well and bake for a further 30 minutes. Remove from the oven and leave to stand for 10 minutes, until thickened.
4.
Spoon into serving dishes and serve warm or cold with raspberries.
