1 Tbsp olive oil
16 ozs sweet Italian sausage (links)
1 onion (peeled and diced)
2 cloves garlic cloves (peeled and minced)
2 cups canned San Marzano tomato (drained and roughly chopped)
1 ½ cups whipping cream
salt (to taste)
freshly ground Black pepper (to taste)
8 cups dried, short Pasta
½ bunch parsley (rinsed and roughly chopped)
Parmesan grated (optional)

Preparation steps

1.
Heat the oil in a large heavy-bottomed skillet over medium heat. Add sausage and use a wooden spoon to scramble the sausage. Cook, stirring frequently, until sausage is no longer pink, about 7 minutes.

Add onion and garlic to skillet and cook until the onion is soft and translucent and the sausage is light brown, stirring frequently, about 6 to 7 minutes.

Add tomatoes, cream, salt and pepper. Simmer gently until the sauce thickens slightly, about 4 to 5 minutes.

Meanwhile, cook pasta in salted boiling water according to package instructions, until al dente. Drain well.

Add pasta to sauce and cook, stirring, until pasta is heated through and sauce reaches the desired consistency, about 2 to 3 minutes.
6.
Divide pasta among plates. Garnish with parsley and sprinkle with Parmesan cheese, if desired.
