- 400 grams Sweet potato
- 300 grams carrots
- 1 yellow onion
- 1 pc ginger (approximately 2 cm)
- 4 sprigs Chives
- 2 Tbsps vegetable oil
- 150 milliliters Whipped cream (at least 30% fat content)
- salt
- freshly ground peppers
- ½ tsp Turmeric
- ½ tsp Curry
Preparation steps

Peel, rinse and dice sweet potatoes and carrots. Peel and finely chop onion. Peel and finely grate ginger. Rinse chives, shake dry and snip into 3 cm (approximately 1 inch) long pieces. In a saucepan, cook onion in oil until softened.

Add sweet potatoes, carrots, and ginger and sauté briefly. Add broth to cover, bring to a boil and simmer over medium heat, 25-30 minutes. Add cream and puree soup with an immersion blender. Season with salt, pepper, turmeric and curry. Serve in preheated soup bowls and garnish with chives.
