500 grams Tomatoes
1 handful cilantro
2 onions
3 garlic cloves
4 Tbsps olive oil
2 cans pureed Tomatoes (each 400 ml)
salt
freshly ground peppers
1 generous pinch Cumin (ground)
1 generous pinch cilantro (ground)
100 milliliters Whipped cream

Preparation steps

1.

Rinse tomatoes, remove stalk and blanch for 30 seconds in a pot of boiling water, drain, rinse with cold water, drain again, peel and chop. Rinse cilantro, shake dry, pluck leaves from stem and tear leaves into smaller pieces.

Peel onions and garlic and dice. Heat olive oil in a saucepan and sauté onions and garlic until soft. Add chopped and pureed tomato. Bring to the boil, reduce heat, cook over low heat for about 10 minutes and season with salt, pepper, cumin and coriander.

3.

Puree soup with an immersion blender, add cream, stir and cook over low heat for about 5 minutes. Divide soup between small bowls, garnish with fresh cilantro leaves and serve.
