- 2 cups Coconut milk
- 2 tsps Curry powder
- ¼ tsp garlic powder
- ½ tsp ground ginger
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 1 head Cauliflower (cut into florets)
- 1 carrot (peeled, sliced into ribbons)
- ½ cup fresh or frozen, green peas
Preparation steps

Combine coconut milk, curry powder, garlic powder, ginger, salt and pepper in a large saucepan; simmer for 10 minutes on medium-low heat.

Add cauliflower and carrot and stir until well coated by sauce; cover saucepan and let cook until vegetables are tender. Add peas and continue to cook until peas are warmed through. Serve immediately.
