600 grams fresh, mixed Wild mushroom
2 shallots
2 tsps Dried-porcini powder
2 Tbsps chopped parsley
4 Tbsps clarified butter
800 milliliters Beef broth (homemade, or Instant)
100 grams Whipped cream
150 grams Crème fraiche
4 egg yolks
salt
freshly ground peppers
2 Tbsps scallions

Preparation steps

1.

Trim mushrooms and chop as needed. Peel shallots and finely dice.

Heat clarified butter in a pot and cook mushrooms, shallots and parsley for 3-4 minutes. Then stir in porcini mushroom powder, add broth, boil, reduce heat, simmer for about 10 minutes and season with salt and pepper. Then add sour cream, creme fraiche and egg yolks and whisk.

3.

Warm soup again, but do not cook egg yolk. Stir in chives. To serve, place in preheated bowls and season with salt and pepper.
