- 4 Chicken breasts (skinned)
- 2 balls Mozzarella (approx. 200 g each, sliced)
- 4 tsps Pesto
- 1 Tbsp fresh Sage (chopped)
- 5 slices stale white bread (crusts removed, grated)
- olive oil
- 1 garlic clove (finely chopped)
- 2 ⅔ cups cherry Tomatoes (halved)
- ⅔ cup dry white wine
Preparation steps

Heat the oven to 190°C (170°C fan), 375°F, gas 5.

Cut a pocket in the side of each chicken breast. Place the mozzarella slices and a teaspoon of pesto in each pockets and close with a toothpick.

Mix together the sage and breadcrumbs with a little oil until a thick paste is formed. Season with salt and ground black pepper.
4.
Place the garlic and the tomatoes in a baking dish, pour the white wine over the top and add oil. Season with salt and pepper. Place the chicken on top and spread with the breadcrumb mixture. Bake for about 30 minutes until golden brown and serve immediately.
