The crispy tofu adds a touch of decadence to this incredibely healthful vegetarian dish, which is packed with nutrients like magnesium, iron and vitamin K from the heart-healthy chard.

Skip the bread crumbs on top to make this entree fully gluten-free.

18 ozs firm Tofu (drained and cubed)
Oil
4 slices Bread (crushed to crumbs)
salt
peppers
18 ozs Chard leaf (green, red, orange)
2 Tbsps Oil
1 onion (finely chopped)
2 cloves garlic cloves (finely chopped)
To garnish
Cress
Lemon wedge
To serve
Tartar sauce

Preparation steps

1.

Heat the oven to 400°F. Line a baking tray with non-stick baking paper.

In a large bowl toss the tofu cubes in the oil to coat.

Mix together the breadcrumbs, salt and pepper to taste and toss the tofu in the crumbs until coated.

Place on the baking tray and bake for 25-35 minutes until light gold and crisp.

Separate the chard leaves and stalks. Tear the leaves and slice the stalks.

Heat the oil in a large skillet (frying pan). Add the onions and chard stalks and stir fry for 3-4 minutes until starting to soften.

Add the garlic and chard leaves, season well and cook for a further 2-3 minutes until the leaves have wilted.

Put the chard mixture and tofu cubes into warm serving dishes and garnish with salad cress and lemon wedges. Serve with tartar sauce.
