1 bunch parsley
½ large Sweet potato (about 600 grams)
1 yellow onion
2 garlic cloves
250 grams Foie gras
4 Tbsps butter
2 Tbsps vegetable oil

Preparation steps

1.

Cut the baguette diagonally into 8-12 (1-1.5 cm (approximately 1/3-1/2 thick) slices. Brush with half of the butter.

Peel the sweet potato and cut into small cubes. Finely chop half of the onion and half a clove of garlic and mix everything with the oil and place in a baking dish. Bake in an oven preheated to 200°C (approximately 375°F) about 20 minutes. After half of the cooking time pour in 50 ml (approximately 3 tablespoons) of water and cook until done.

Meanwhile, finely chop the foie gras. Finely chop the other half of onion and garlic. Rinse the parsley, shake dry and chop.

Arrange the buttered bread next to each other on a baking sheet and bake 3 minutes before the end of cooking time for the baking dish until toasted.

Saute the fois gras in butter, add the onion and garlic and cook briefly.

6.

Remove the bread from the oven, mix half the parsley with the fois gras, mix the other half with the sweet potatoes, season both to taste with salt and pepper, spread each on half of bread, transfer to plates and serve with wine.
