- 4 Mackerel (approx. 250 g each, ready-to-cook, heads removed)
- 4 Tbsps olive oil
- 4 cloves garlic cloves (crushed)
- 1 ½ cups day-old white bread (crusts cut off, finely chopped)
- 1 Tbsp fresh parsley (chopped)
- 1 onion (diced)
- 2 Tbsps Pepper puree
- dry white wine
- 8 Tomatoes (skinned and chopped)
- 1 Tbsp Caper
- Chili powder
- parsley (to garnish)
Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and brush a baking tray with oil.

Season the fish with salt and ground black pepper inside and out. Place on the prepared baking tray and drizzle with oil.

Mix together the garlic, breadcrumbs, 2 tbsp oil and the parsley. Spread onto the fish and bake for around 20 minutes until golden brown.

To make the sauce, fry the onion in a pan with the remaining oil. Add the pepper purée, a dash of wine, the tomatoes and the capers. Simmer for around 10 minutes and season with salt and chilli.

Transfer the sauce to plates, place the fish on top and serve garnished with parsley.
