- 2 Mangoes
- 1 chili pepper
- 1 pc fresh ginger (3 cm)
- 2 Tbsps Peanuts (shelled)
- 1 Lime (zested and juiced)
- 3 Tbsps vegetable oil
- salt
- peppers
- 1 pinch sugar
- 1 Cucumber
- 2 sprigs cilantro
- Chili thread (for garnish, to taste)
Preparation steps

Peel mangos, slice fruit away from pit and cut into small cubes. Halve chile pepper lengthwise, remove seeds and ribs and cut into very small cubes. Peel and finely grate ginger. Coarsely chop nuts. To make dressing, mix lime juice, lime zest, chile, ginger and oil. Season with salt, pepper and sugar. Fold mango into dressing.

Rinse cucumber, cut diagonally into 2 cm thick (approximately 3/4 inch thick) slices and scrape out seeds with a spoon to hollow out. Fill cucumber boats with mango salad. Rinse cilantro, shake dry and strip leaves from stems. Serve boat with sprinkled with peanuts, cilantro and chile strips.
