- 4 cups Whole-wheat pasta
- 1 tsp salt
- water
- 1 Tbsp olive oil
- 3 cups Kale (coarsely chopped)
- 1 ½ cups Blue cheese (crumbled)
- freshly ground Black pepper
- For the dressing
- 1 Tbsp lemon juice
- 2 Tbsps Cider vinegar (or white wine vinegar)
- 2 Tbsps red Pesto
- 2 Tbsps extra virgin olive oil
Preparation steps

Cook the pasta in a pan of boiling salted water, according to the packet instructions and drain.

Heat the olive oil in a large frying pan, add the kale and stir-fry for 2-3 minutes until the kale has wilted. Set aside to cool.

For the dressing: mix together the lemon juice, vinegar, and pesto, then whisk in the olive oil until smooth.
4.
Stir into the warm pasta, then add the kale and cheese. Season to taste with pepper and toss well.
