- 5 ¼ cups cooked Penne
- 4 skinless, boneless Chicken breasts (sliced)
- 2 Tbsps chopped thyme
- 1 pinch dried Chili flakes (optional)
- 2 cloves garlic cloves (crushed)
- 8 sun-dried tomatoes (in oil)
- 4 cherry Tomatoes (quartered)
- 12 black Olives (halved)
- 4 Tbsps Tomato Pesto
- 1 Tbsp white wine vinegar
- 6 Basil (torn)
- salt
- freshly ground Black pepper
Preparation steps

Stir all the salad ingredients together until well mixed.

Put into serving bowls and scatter the cheese shavings and basil leaves on top.
