½ tsp freshly ground peppers
1 can Bamboo shoots (540 ml)
½ red Bell pepper
½ green Bell pepper
4 Tbsps Corn oil
2 Tbsps yellow Curry paste (jar)
2 Tbsps sugar

Preparation steps

In a bowl, combine 1 tablespoon oyster sauce and pepper. Cut pork into 1- by 4-cm (approximately 1/2- by 11/2-inch) long strips. Add pork to oyster-pepper sauce and marinate about 15 minutes.

Drain bamboo shoots, rinse with cold water and cut into thin strips.

Rinse and trim peppers, remove seeds and ribs and cut into thin strips.

In a wok or frying pan, cook pork in hot oil until browned, about 2 minutes. Add curry paste, cook briefly, then add bamboo shoots, peppers, remaining oyster sauce, sugar and a little water. Stir-fry over high heat about 2 minutes. Season with salt and pepper and serve immediately.
