2 cups Soy milk
1 tsp vanilla extract
4 egg yolks (beaten)
1 Tbsp Corn starch
3 Tbsps superfine caster sugar

Preparation steps

1.
Heat the soya milk in a pan but do not boil. Remove from the heat.
2.
Beat together the vanilla, egg yolks, sugar and cornflour in a bowl. Slowly pour in the warm soya milk, a little at a time, beating constantly.
3.
Pour into the pan, and cook over a low heat, stirring all the time until the custard starts to thicken.
4.
Remove from the heat and serve.
