- For the cupcakes
- 2 eggs
- ½ cup caster sugar
- ¼ cup cream (30% fat)
- 1 tsp vanilla extract
- ⅔ cup self-rising flour
- ½ tsp Baking powder
- ¼ cup butter (melted and cooled)
- For the decoration
- powdered sugar
- 2 ¼ cups white Sugar paste
- 2 ¼ cups pink Sugar paste
- 2 Tbsps Apricot Jam
- 10 Sugar flower

For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in a 10 hole bun tin.

Whisk the eggs and sugar until light, then beat in the cream and vanilla.

Sift over the flour and baking powder and gently stir in. Stir in the butter, until well blended.

Spoon into the paper cases and bake for 12-15 minutes until golden and springy to the touch. Leave to cool in the tins for 5 minutes, then turn out onto a wire rack to cool completely.

For the decoration: lightly roll out the white sugarpaste on a surface lightly dusted with icing sugar. Cut into small squares. Repeat with the pink sugarpaste, cutting out the same number of squares.
6.
Gently warm the apricot jam and brush over the cupcakes.
7.
Arrange the sugarpaste squares on top of each cake, alternating pink and white, to form a checkerboard pattern, as in the photo. Place a sugar flower on each cake.
