- For the muffins
- ⅔ cup honey
- ⅔ cup dark brown sugar
- 0.333 cup butter
- 3 Tbsps milk
- 1 ⅔ cups all-purpose flour
- 2 tsps Baking powder
- 2 Tbsps cocoa powder
- 2 eggs (beaten)
- For the icing (frosting)
- 1 ¾ cups powdered sugar
- ¼ cup cocoa powder
- 2 Tbsps sugar
- 3 Tbsps water
- To decorate
- Sugar flower
Preparation steps

For the muffins: heat the oven to 160°C (140° fan) 325°F gas 3. Place paper cases in a 12 hole muffin tin

Warm the honey, sugar, butter and milk in a pan until the sugar dissolves. Stir and allow to cool.

Sift the flour, baking powder and cocoa into a mixing bowl. Stir in the cooled honey mixture until blended, then stir in the eggs until smooth.

Spoon into the paper cases and bake for 25 minutes. Leave in the tins for 5 minutes then place on a wire rack to cool completely.

For the icing: sift the icing sugar into a bowl. Heat the cocoa, sugar and water in a pan over a low heat until the sugar has dissolved. Bring to a boil and immediately remove from the heat.
6.
Pour onto the icing sugar and beat until smooth. Use while warm as this icing sets quickly.
7.
Spread the icing on top of the muffins and decorate with sugar flowers.
