Ingredients

For the dough
200 grams Wheat starch
boiling water
For the filling
100 grams chopped shrimp
1 generous pinch freshly grated ginger
1 Tbsp sesame oil
freshly ground peppers
1 Tbsp minced onions (or leeks)
salt
1 egg yolk
For the sauce
6 Tbsps soy sauce
4 Tbsps Wine vinegar
1 Tbsp Chives

Preparation steps

1.

For the dough: Knead together wheat starch and water to form a supple, smooth dough. Thinly roll out and cut out 10 cm (approximately 4 inch) circles.

For the filling: Combine shrimp, ginger, sesame oil, pepper, onion (or leek) and salt. Mix well.

Pour filling into the center of the circles. Whisk egg yolk with 1 tablespoon water and brush edges with it. Fold in half and press to seal. 

3.

Steam in a bamboo basket for 10 minutes.

For the sauce: Stir together all sauce ingredients.

Serve dim sum with sauce.
