750 grams starchy potatoes
50 grams butter
2 egg yolks
salt

Preparation steps

1.

Peel the potatoes and cook in boiling salted water for about 25 minutes, until tender. Drain and let cool slightly.

Press the potatoes through a potato ricer while still warm, stir in the butter and egg yolks and season with salt, pepper and nutmeg. 

3.

Transfer the potato puree to a pastry bag affixed with a star tip and pipe rosettes onto a baking sheet lined with parchment paper. Brush with melted butter and bake in an oven preheated to 220°C (approximately 425°F) for 8-10 minutes, until golden brown.
