¾ cup unsalted butter (softened)
1 cup soft light brown sugar
1 Orange (zested)
3 Tbsps Apricot Jam (or jelly)
3 medium eggs (beaten)
1 ½ cups all-purpose flour
1 tsp Baking powder
¾ cup Almond flour
2 Tbsps Whole milk
3 cups mixed Dried Fruit (e. g. sultanas, raisins, currants etc.)
cup Candied cherry (chopped)

Preparation steps

1.
Preheat the oven to 170°C (150° fan) | 325F | gas 3. Grease and line the base of a 20 cm | 8" springform cake tin with greaseproof paper.

Cream together the butter and sugar in a large mixing bowl until pale and fluffy, 2 - 3 minutes. Briefly beat in the orange zest and apricot jam.

Beat in the eggs, little by little, until incorporated. Fold through the flour, baking powder, ground almonds, and milk.
4.
Stir in the mixed dried fruits and glacé cherries. Spoon the batter into the prepared tin and smooth the top with a spatula dipped in water.
5.
Bake for 1 hour 45 minutes - 2 hours 15 minutes until golden on top and a cake tester comes out almost clean from its centre; there should be just a few crumbs on the tester.
6.
Remove to a wire rack to cool completely. Turn out when ready and decorate with ribbon if desired before serving.
