250 grams Chinese Egg noodle
16 shrimp (peeled, head removed)
1 garlic clove
200 grams soybean sprout
1 bunch scallions
3 Tbsps vegetable oil
½ tsp Sambal oelek
2 tsps cornstarch
1 tsp sugar
1 Tbsp lemon juice
2 tsps Tomato paste
l Broth
salt

Preparation steps

1.

Cook the noodles according to the package directions, then drain.

2.

Stir fry the noodles in 1 tablespoon of oil in a wok until crispy. Remove and keep warm.

3.

Stir fry the shrimp in 2 tablespoons of oil, add the pressed garlic, then remove and keep warm.

4.

Trim and rinse the scallions, then thinly slice. Stir fry with the sprouts in the remaining oil. Sauté briefly, remove, and keep warm.

5.

Mix the cornstarch with the broth, sambal oelek, sugar, lemon juice, and tomato paste. Add to the wok, bring to a boil, and season to taste.

6.

Transfer the noodles to a bowl and top with the vegetables and shrimp. Top with the sauce and serve.
