- 4 slices Whole Wheat Bread
- 4 eggs
- 1 shallot
- 1 Tbsp scallions
- 1 tsp finely chopped parsley
- 1 Tbsp medium-hot Mustard
- 4 Tbsps Mayonnaise
- 2 Tbsps cream cheese
- salt (and)
- freshly ground peppers
- Curry powder
- Cucumber
- radish or Radish sprout (for garnish)
- 4 small button Mushroom (for garnish)
- Dill (for garnish)
Preparation steps
1.
Hard boil the eggs for 10 minutes, drain, let cool and peel.
2.
Peel the shallots and chop finely. Chop 2 of the eggs finely and cut 2 eggs into eighths for garnish.
3.
Mix the chopped egg, onion and herbs with mustard, mayonnaise and cream cheese and season with salt, pepper and curry powder.
4.
Trim the mushrooms and cut into slices.
5.
Cut the slices of bread in half and spread with the egg mixture. Serve garnished with cucumber slices, sliced eggs, radish sprouts, mushroom slices and dill.
