- 8 small Endive
- 3 Tbsps olive oil
- Sea salt
- 2 Tbsps honey
- 1 Tbsp lemon juice
- 1 Tbsp balsamic vinegar
- 100 milliliters Vegetable broth
- 2 Tbsps Red cabbage sprout
Preparation steps

Rinse the endive and cut into eighths. Remove the hard stalk but only cut so much so that the leaves are still attached together.
Fry in some oil on all sides until golden brown. Season with salt. Drizzle with honey, let caramelize and then drizzle with the lemon juice and the vinegar.

Pour in the broth and simmer, covered, for about 10 minutes over low heat, until tender.
Arrange on plates and serve garnished with the cabbage sprouts.
