15 ozs canned chickpeas
1 onion (peeled and finely chopped)
1 clove garlic cloves (peeled and finely chopped)
2 Tbsps fresh parsley (finely chopped)
1 pinch Cumin
Sea salt (to taste)
cayenne pepper (to taste)
4 Tbsps all-purpose flour
vegetable oil (for frying)
For Yogurt Sauce
1 cup plain Yogurt
2 Tbsps Lime juice
2 Tbsps fresh mint (chopped)
In Addition
1 large, ripe Tomato (washed and trimmed)
1 handful fresh parsley

Preparation steps

Rinse the chickpeas in cold water and drain well in a colander. Puree the chickpeas in a food processor.

Place the pureed chickpeas in a mixing bowl. Stir in the chopped onions, garlic and parsley. Season with cumin, salt, and cayenne pepper. Gradually add in the flour, using your clean hands to knead the mixture. With moistened hands, roll into walnut-sized balls.

Heat the oil in a deep fryer or large pan. Working in batches, fry falafel for 2 to 3 minutes, or until deep golden brown. Remove and drain on absorbent paper towels.

In a small bowl, combine yogurt, lime juice and mint.

To Assemble and Serve:

Slice the tomato into 8 slices. Place 1/4 cup yogurt sauce in 4 glasses followed by 2 tomato slices. Top with fresh parsley. Divide falafel evenly between serving glasses.
