Preparation steps

1.

Peel the potatoes and coarsely chop. Peel the onion and chop finely. Trim and rinse the scallions and cut diagonally into rings. Heat the oil in a pan and sauté the onion and scallion rings. Add the potato cubes and sauté everything well.

Beat the eggs in a bowl and season with salt and pepper. When the potatoes are crispy, pour in the eggs and cook until done. Season with salt and pepper before serving and serve in the pan.
