8 small Minute steaks (pork)
8 slices Bacon
50 grams Pine nuts
300 grams Fennel
50 golden raisin
40 milliliters olive oil
30 milliliters White vinegar
salt
peppers (freshly ground)
1 generous pinch cayenne pepper
1 Tbsp lemon juice
20 grams butter

Preparation steps

Rinse steaks under cold water, pat dry and wrap with bacon. In a small, dry pan, toast pine nuts. Rinse, trim and halve fennel, then cut into thin slices. Set a few fennel leaves aside for garnish.

Heat olive oil in a large saucepan. Add fennel slices and golden raisins and sauté briefly. Add vinegar and 250 ml (approximately 1 cup) water. Cook about 5 minutes over low heat. Season vegetables with salt, pepper, cayenne pepper and lemon juice.

Heat butter in a pan. Add steaks and cook on both sides. Divide fennel slices among plates, top with steaks and serve sprinkled with reserved fennel leaves.
