1 egg white (lightly whisked)
½ cup caster sugar (scant)
½ tsp Sea salt
1 tsp ground Cumin
1 tsp paprika
½ tsp cayenne pepper
½ tsp ground cinnamon

Preparation steps

1.
Heat the oven to 160°C (140° fan) 325°F gas 3. Line a baking tray with non-stick baking paper.

Toss the almonds in the egg white. Add the remaining ingredients and mix well.
3.
Spread the nuts on the baking tray in 1 layer and bake for 20–25 minutes, stirring halfway through. Leave to cool before serving
