Feta provides a lot of lean protein to your diet and calcium that is very important for healthy bones, teeth, and hair. The herbs provide extra nutrients and flavor that makes these appetizers extremely impressive. 

You can bake these instead of deep frying them for a lighter variation.

2 ½ cups Feta (crumbled)
2 Tbsps parsley
2 Tbsps chopped Dill
1 Tbsp chopped mint
4 sheets Rice paper (10 inch x 10 inch)
Oil (for deep frying)

Preparation steps

1.
Mix the feta with the herbs in the cheese mix.
2.
Cut each sheet of rice paper diagonally into 4 triangles.
3.
Place on a surface with the triangle point facing upwards, parallel to the bottom side.
4.
Spread 1 tablespoon of the filling on each triangle and roll up towards the tip. Brush the top with water to stick. Repeat with the remaining rice paper sheets and filling.
5.
Heat the oil in a deep pan and fry the rolls for 2-3 minutes until golden brown. Drain on kitchen paper and serve immediately.
