- 4 sheets phyllo pastry
- 2 Tbsps butter (melted)
- 2 Tbsps sugar
- 1 ⅛ cups Yogurt
- 1 Tbsp runny honey
- 1 ⅔ cups Strawberries (sliced)
- 1 Orange (zest only)
Preparation steps

Heat the oven to 220ºC (200º fan) 425ºF, gas 7.

Using scissors, cut each sheet of filo pastry into 8 pieces. Brush 2 cookie sheets with a little melted butter, place the pastry pieces on the sheet and brush them with a little more butter.

Sprinkle with a little sugar and bake in the oven for 5 minutes or until lightly browned and crisp. You will probably have to cook the pastry in batches.

Mix the yogurt with the honey and gently mix in most of the strawberry slices, setting a few aside.

Place 8 pieces of cooked pastry onto each plate. Carefully spoon over the yoghurt and strawberry mixture, add a few reserved strawberry slices then top with 8 more pastry pieces and scatter over the orange zest.
