Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.

Place one sheet of filo pastry onto the work surface, spread with some butter and place the second sheet on top. Cut into eight 10 x 10 cm squares.

Mix together the goat's cream cheese, egg yolk, Pecorino, garlic and the herbs and season with salt and ground black pepper.
4.
Spread an eighth of the mixture on each pastry square. Fold in half diagonally and then again to form a small triangle. Stick the edges down with egg white. Brush the triangles with butter and place them side by side on the prepared baking tray.
5.
Bake for 15-20 minutes until golden. Serve either warm or cold with a dip.
