For the dough
250 grams Pastry flour
½ tsp salt
5 Tbsps lukewarm milk
For the topping
100 grams mixed Fresh herbs ((such as mint, chervil, arugula, burnet)
4 Tbsps cream cheese
1 Tbsp Whipped cream (at least 30% fat content)

1 Tbsp black Sesame seeds
1 tsp Red pepper flakes
2 Tbsps olive oil

Preparation steps

Preheat the oven to 240°C (approximately 475°F) top and bottom heat. Mix the flour with the salt in a bowl. Mix 5 tablespoons lukewarm water with the milk. Add the liquid to the flour and knead into a smooth dough with the dough hook of the electric hand mixer for about 10 minutes. If the dough is too wet or too dry, either add a little flour or water. Roll out the dough thinly, place on a parchment paper-lined baking sheet and bake about 10 minutes in the preheated oven until golden brown.

Rinse the herbs, shake dry and pluck off the leaves. Mix the cream cheese with the cream. Remove the flatbread from the oven, break into pieces or cut and spread with the cream cheese mixture. Arrange the herbs on top, sprinkle with salt, pepper, sesame seeds and chilli flakes and serve drizzled with olive oil.
