Preparation steps

1.

Crack eggs into a metal mixing bowl and beat until fluffy with an immersion blender. Slowly sprinkle in sugar along with a pinch of salt. Beat over a hot but not boiling water bath until light and creamy. Remove from heat and continue stirring until mixture has slightly cooled.

Stir butter until creamy. Halve vanilla bean lengthwise and scrape out seeds with a sharp knife. Add to butter. Wait until egg mixture is the same temperature as butter mixture and then combine. Chill until serving.
