600 grams onions
2 Tbsps vegetable oil
3 tsps sugar

1 ½ liters Beef broth
2 garlic cloves
1 tsp lemon juice
4 sm slices white bread
100 grams grated, mature Mountain cheese (such as Gruyere)

Preparation steps

1.

Peel onions and cut into thin rings. Heat oil in a saucepan and saute onions until soft about 10 - 15 minutes. Season with sugar, salt and pepper and simmer another 10 minutes, stirring occasionally, until onions are light brown.

Add broth, bring to a boil, reduce heat and simmer for another 10 minutes. Peel garlic and finely chop. Add garlic to soup and season with lemon juice, salt and pepper.

Pour onion soup into 4 soup bowls that can go in the oven. Put 1 slice of white bread on top of each bowl and cover bread in a layer of cheese. Bake in a preheated oven at 220°C (approximately 425°F) for 5 - 10 minutes, until the cheese is melted. Serve immediately.
