- 4 Chicken drumstick
- 4 Chicken thigh
- ¼ cup bleached all-purpose flour
- 1 pinch dried oregano
- coarse salt (to taste)
- freshly ground Black pepper (top taste)
- 2 Tbsps unsalted butter
- 2 Tbsps olive oil
- 1 small onion (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- ½ cup dry white wine
- 4 Roma tomatoes (peeled, seeded and chopped)
- fresh oregano (for garnish)
Preparation steps

Wash and pat dry the chicken pieces.

Season the flour with dried oregano, salt and pepper. Lightly dust the chicken with flour; shaking off any excess.

Heat the butter and olive oil over medium heat in a heavy skillet. Add the chicken pieces; brown well for 5 to 10 minutes, turning frequently. Remove chicken from the pan and set aside.

Drain any excess fat from the skillet. Add chopped onion and cook for several minutes until translucent. Add garlic and cook until fragrant. Add the wine and bring to a quick boil, stirring and scraping any bits and pieces in the bottom of the pan. Add the chopped tomatoes, stirring to combine. Return the chicken to the pan. Cover and simmer for 15 minutes or until the chicken is cooked through.

Divide between plates. Sprinkle with fresh oregano leaves. Serve.
